With a new season comes an exciting new menu at Le Cirque Dubai. With a history of French cuisine infused with an Italian personality, the duality of the restaurant’s culinary traditions become a bridge to a variety of innovative and delicious dishes.
Embodying the ethos and mantra of the founding Maccioni family, Le Cirque Dubai takes inspiration from an original menu that has been developed by some of the world’s most notable chefs. The culinary approach remains modest and ingredient-driven: fresh, light and contemporary à la carte dishes from the French cuisine, with an Italian personality.
Chef Wesley Tyron-Berghoff interprets the complement of the two cuisines in his own special way. “We wanted to include French dishes that connoisseurs are not used to ordering in Dubai. Because our cuisine is ingredient-driven, we have sourced rabbit, pigeon, duck and seasonal meats with strong character and bold flavours. Our best sellers have been revisited, incorporating fruits and vegetables from the autumn markets. For example, the frozen Foie Gras Parfait is now served with spiced plum, pickled cherry, gingerbread and brioche. Figs, chestnuts, sweet potatoes and fragrant truffles are making their way to our plates. We are also adding typical French dishes to our menu, such as Escargots à la Bourguignonne, with garlic and herb butter, and featuring the all-time classic family dish, Tuna à la Basque, which we serve in an unexpected chilled Provençale sauce, alongside Gillardeau oysters,” he says.
The Italian taste is captured by signature dishes like the Pasta Primavera, the home-made Asparagus risotto and Salmon gnocchi, which melt in your mouth, reminiscent of the Tuscan origins of Le Cirque’s founding father, Sirio Maccioni. Burrata is a menu feature too, married with dates, as a tribute to the restaurant’s new home in the UAE.
